It starts with realizing your connection with the Earth. The earth will always provide you with the food that you need. Whole food in its purest form. Not chemically laden formulas disguised as food. You will begin to appreciate the people who grow the food. You will not settle for a fruit or vegetable that was grown in the most clean way possible. Because, you see, the energy from these foods becomes a part of you when you ingest it. It's all about conscious eating. Being aware of not only what you put in your mouth but where is comes from. Good for You Chocolate Dip

Try this tasty chocolate dip for kids made with no dairy, gluten, or eggs when you have a sweet craving. Full of antioxodents and protein makes you feel good about your indulgence. A great sweet treat for kids that's not full of sugar.

Chocolate Dip
1 cup spinich
3/4 cup non-dairy milk
1/2 cup frozen blueberries
1/2 cup dates
1/3 cup raw cashews
1 1/4 tbsp. cocoa powder
1/4 tsp. vanilla

Blend in Vitamix or other high speed blender till creamy. Best if it sits in fridge for a few hours.

Miraculous Mushroom Soup

Sometimes no matter how hard you try, you will get a cold. Getting a cold, every once in a while, is good for your immune system. Anyone that knows me, knows that getting sick makes me super emotional and anxious. It is really hard for me to just give into it and rest. Moms all over know what I am talking about. You run the family and there is no time for you to be sick. I've been trying to deny it since Saturday and now I finally have to give in and like my favorite song goes, "Let it Go." So, I committed cardinal sin #1, cancelled all committments I had scheduled for this week. That was rough! On the advice of my naturopath I should do for myself what I would tell my kids to do if they were sick and that is to rest. I am blessed to have such wonderful healers in my life that give such good advice. It takes a village. If you don't have a good chiropractor, acupuncturist, and naturopath you may want to consider finding at least one. Back to the yumminess: I took a soup that I normally make and I immunified it by adding some garlic and ginger. As always, it's gluten and dairy free. The creaminess from it comes from the cashews. It is a recipe from my favorite cookbook, Nourishing Meals. Recipe is below. I would have posted a picture but I cannot find my camera since the house is completely tore apart with hopes of feng shuing the kids rooms....but that's another blog, another day:)

Miraculous Mushroom Soup
1 onion rough chopped
3 carrots rough chopped
2 tbsp grapeseed oil
10 cloves garlic, skin off, split down the middle
2 inch piece of ginger peeled and split in 2
2 containers of baby bella mushrooms
1 tbsp dried thyme
1 tsp. rosemary
2-3 tsp. Herbamare or sea salt
6 cups of water
1/2 cup cashews
Heat oil and saute onions, garlic, carrots, and ginger. Saute for 5 minutes. Add mushrooms and seasonings and saute for a few more minutes. Add water and bring to a boil. Than simmer for 20 minutes until veggies are soft. Put cashews in Vitamix/Ninja/Blendtek, etc. add soup and blend till creamy. If you cannot fit in one blend, seperate and than combine all in soup pot to warm.

The stats:
Mushrooms increase the production of antiviral proteins that can destroy invaders that make you sick.
Garlic is a natural antibiotic and antibacterial. The Chinese have been using ginger for 2500 years to treat congestion, sinus pain, and sore throat.

Jack of All Trades Garlic Mix

This was a great find for me! I was searching last week for a cold remedy online. I found a few things, but I wanted the most simple. So, I made this balm. Here is what was in it:

Jack of All Trades Garlic Mix
3 cloves finely minced garlic
3 tbsp coconut oil
3 tbsp olive oil
Blend in a ninja blender, food processor, etc. and store in fridge in a glass jar. Will last in fridge for a few weeks.

I used this balm to rub on the bottom of my feet before bed. I than applied socks and went to sleep. I woke up in the morning without a sore throat anymore and feeling much better. I loved the smell of it, so I made another batch, not to rub on my feet, but to eat. Here are a few things I have been using it for:

- rubbing on bread and toasting for garlic bread
- sauteing vegetables in 
- using in guilt free alfredo sauce

This could also be rubbed on a chest or back if you are having a chest cold. I mean, no mistakes about it, you will smell like garlic but the benefits will probably outweigh the smell.

Guilt Free Alfredo

I was never much of an alfredo fan. It was just too rich for me with all of cream and butter. But, lately Jackson has discovered that he loves quinoa noodles....so I have been investigating new dinner recipes that involve noodles. I found this one today on one of my fav websites, detoxinista.com. The more I do adaptations of "normal" food, I find that cauliflower wears many different masks. This recipe is absolutely guilt free. You could also eat it over shredded zucchini noodles or spaghetti squash. Here is my recipe that I have tweaked a little bit from the detoxinistas.


Guilt Free Alfredo
1 teaspoon coconut oil, or butter
2 large cloves garlic, minced
1 small cauliflower head, cut into florets
1 1/2 cup water
1/2 teaspoon Herbamare or sea salt, or more to taste
black pepper, to taste

Saute the minced garlic in the coconut oil or butter in a small saucepan over low heat. Allow to cook for a few minutes, until the garlic is tender and fragrant, but not browned. Add the 1 cup of water to the saucepan, along with the cauliflower, and bring the water to a boil. Once the water is boiling, reduce the heat to a simmer and cover the pot for about 10 minutes until the cauliflower is fork-tender and very soft. Transfer everything from the saucepan into a blender or food processor, and season with salt and pepper. Process until smooth and creamy. Add coconut milk till you reach a consistency that you like. You'll want it alfredo like! I wanted an even more garlicy flavor, so I also added a tsp. of my Jack of All Trades Garlic Mix (see next post). Mix with noodles in a saute pan and serve with a nice salad:)

Ultimate Recipe for Strawberry Vegan Ice Cream

Not much more to say about this is that it was the easiest thing I have made ever and was a real treat! 
It even had the same consistency of ice cream and didn't taste entirely of bananas!

Strawberry Vegan Ice Cream
2 frozen bananas
1 cup frozen strawberries
1 pack stevia
1/2 can coconut milk

Blend in vitamix. You will definately have to use tamper.

Favacado Sorbet and Compotes

Who knew how good sweets could be for your kids? I have been working hard this summer to create some cool, creamy concoctions that are also uber-nutritious. I think I have the winning formula. I call it the Favacado Sorbet. Fruit...Avacado....Sorbet....The result has a creamy, sweet taste with a sorbet-like texture:

Favacado Sorbet
1-2 avacados
1 cup of frozen fruit ( kids seems to like peach or peach mixed with berries)
a splash of coconut milk (any non-dairy milk will do)
a packet of stevia or sweetener of choice

Blend in Vitamix using tamper to push contents into the blade. Eat right away. Not only are the kids getting the healthy fats from the avacado but an antioxident boot from the fruit....win/win.

Organic peaches were on sale last week at the store for $1.99/lb. I knew we couldnt eat them all before they went bad, so I thought I would try to make a compote. Since I have made it we have had it on yogurt, pancakes, with granola and coconut cream, on ice cream, on toast, made a crumble out of it....I cannot believe how many times we have pulled it out. It is SO versatile. Last night I took my butt back to the store to buy some more peaches and now we have peach/berry compote in the freezer for in the middle of winter when we want to remember what summer tasted like:)

Fruit Compote
4 large peaches diced or chopped depending how chunky you like your compote
a handful of frozen fruit. I used blackberries
a sprinkle of date sugar or any other sugar.  I used date sugar cause it is so low on the glycemic index

Put all ingrediants in a pot with a splash of water on the stove. Cook them on medium heat until the fruit gets soft. You can turn down the heat to low if it seems like it is sticking. Once the fruit is soft and it all kinda melds (is that even a word?) together,  take off heat and put in canning jars. You can put it in your fridge to cool or freeze it for another time. No need to seal the canning jars since its going in the freezer and not on a shelf. One last note, you can use any fruit for this recipe. I just like to use what is on sale at the time.

Chicken and Waffles with a Juice or 2 or 3 or 4........

All we juiced in only ONE day for 2 people
What to do after a weekend of indulgence....a juice cleanse, what else? If you have ever seen the documentary Fat, Sick, and Nearly Dead, you know the benefits of juicing. Do I think that it's safe to juice everyday, all day for weeks and months at a time...no. However, a 1-3 day jaunt here and there to reboot your body does it some good. The juice cleanse I prefer is from the maker of the documentary. It is 5 juices a day and a huge salad for dinner. Not once did I feel hungry or deprived. Since I am juicing, what am I going to feed the fam? I was planning on making them waffles anyways but I wanted to add some protein...so chicken and waffles it is! I have been making these fabulous teff pancakes that the kids love. Teff is an gluten free ancient grain used by the Egyptions. It is good fiber and makes a yummy pancake. I got the recipe from the book that saved my life in this food sensitivity world....Nourishing Meals. Here is the recipe:

Teff Banana Pancakes
Happy Girl!
1 cup teff flour
¼ cup tapioca flour
2 tablespoons ground flax seed
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon sea salt
1 cup water or non-dairy milk
¼ cup mashed ripe banana (about 1 small banana)
2 tablespoons oil
1 tablespoon maple syrup or honey

Combine wet and add to dry ingrediants. Fry on griddle.

Onto the chicken part. I found the most fabulous chicken nuggets in the freezer section at, where else, Target....Applegate Farms Gluten and Casein Free Chicken Nuggets. And the heavans opened up and the angels sang:) This is how I felt seeing these. I so appreciate and love Applegate Farms. The nuggets  baked right up in the oven and were a delicious add-on to the waffle. Poured some real maple syrup on everything, with a side of hashbrowns and that is one tasty meal! Chicken + Waffles = Happy Kids.

Cheating the Dairy, Egg, and Gluten Free Way

So, the 4th of July weekend has come to an end and my idea of cheating has been too many chips, salsa, and guacamole. But, it seems like everytime I veer from eating what works best for my body...I pay for it in the way of muscle aches. So, the last few days have been pretty rough...time for a 2 day detox. Kids are in day camp this week, so I actually have time to focus on me. Like usual, a physical detox usually leads to an emotional detox. Not sure why the 2 are connected, but it happens everytime. But, I guess smoothies and tears never hurt anyone, so I am up for it:) In true detox eve fashion, I was craving sweet and who says cheating isn't fun eating gluten, dairy, and egg free? So, I created the banana coconut cream pie sundae and I wanted to share it, cause god it was SO good. 

Gluten, Dairy, Egg Free Banana Coconut Cream Sundae (wow long title!)
• A few scoops of French Vanilla Soy Dream Ice Cream
• Peanut Butter (mine is homemade, but any type will do)
• Enjoy Life Foods dairy, egg, gluten free mini chocolate chips
• raw shredded coconut
• 1/2 banana diced

Melt 1 tbsp. peanut butter with 1/2 tbsp chocolate chips. Pour mixture over ice cream and
top with diced bananas and coconut.

I Can't Believe They Like It: Chia Pudding

We always loved our ice cream, so we were in need of a sweet creamy treat to take it's place now that dairy is out for a while. We buy coconut milk ice cream on occasion, but I was looking for an everyday item that could go in the kid's lunchboxes. Enter: Chia Pudding. The texture of chia pudding is like that of tapioca pudding, so that made me nervous. I have seen recipes for this concoction before, but had never tried it. The first batch I whipped up was chocolate. Jackson tried it right away (cause it was chocolate). Don and Maddy were harder sells. I made a second batch of vanilla/cinnamon and that was the deal breaker. I won Don and Maddy over with the vanilla batch. You have got to try this. It's our sweet savior in this house.

Chia Pudding
1/4 cup of chia seeds
1 cup non-dairy milk

Combine in a blender and let sit in the fridge for an hour. It will thicken and at that time you can add your extract flavoring of choice, sweetener of choice (ours is stevia), cinnamon, fruit..whatever.

A Few New Favs

I have so wanted to get caught up with this blog because I have so many new recipes and endeavors that I am taking on and I want to share them with everyone. Since our food sensitivity testing as a family, life has changed a little. None of us are eating any gluten, dairy, or eggs. We are hoping to reintroduce them in 3-6 months with the hopes that our bodies will be better able to tolerate them after a brief rest from them. Until then, we will keep doing what we are doing. Jackson is currently on a rotated diet and he is eating more foods! Yeah! If you know Jackson, this is a huge milestone. Some of his favorites are corn crusted perch, applegate beef hotdogs, and turkey burgers with bacon mixed in. (Thank you How To Eat Like A Dinasaur Cookbook). The first night we ALL had the same dinner, I cried. Moms of picky eaters everywhere and people who really know me can completly understand this reaction:) The suppliments and change in his diet has had a very positive effect on him and for that I am so thankful. Tonight is pizza...and yes, Jackson will eat that too. However, his pizza has olive oil, garlic, and bacon on it. For a persnickity child, he sure has a grown up food pallet. Here are a few of our favorites:


Banana Split Oatmeal
rolled oats
bananas
hemp hearts
strawberries
honey

Make oatmeal according to directions. Add sliced bananas, strawberries and hemp hearts for crunch, 
Sweeten with honey if you think necessary. I find the bananas give it enough sweetness. Serve in a sundae cup....kids loved the sundae cup, especially at breakfast time.

Chocolate Shake
1 can chilled full fat coconut milk
1 frozen banana
1 large handful of spinich
1 packet of stevia
2 dates
1 avacado
1 cup ice

Blend everything thoroughly in vitamix and add a little water until you get to a consisitancy that you like. We had this last night as a "special" after the kids Spotlight theater showcase and they liked it. Sweet and super healthy all at the same time.

Nut Butters
Any type of nut (we do cashew, peanut, pecan, sunflower seed)
any type of mild oil (grapeseed, sunflower, coconut)

Add oil and nuts to vitamix or food processor and process until smooth. Add more oil as needed to get to right consistency. You can add in chocolate chips, cinnamon, vanilla flavoring, raisins...the skys the limit. Delicious. You will never buy nut butter again!

Maddy's Creation

Tonight as I was packing lunches, I noticed that we had alot of carrots and I thought a nice carrot side salad might be cool for Maddy to whip up.  In one of my favorite books, Bringing Up Bebe, they mentioned that in France, a carrot salad is a nice starter course to a meal. Well Maddy likes anything French, so she went with it.  We shredded the carrots and then I gave her some suggestions about what to add and here is what she came up with. 
I love when kids get creative with food. 

Carrot Salad Ala Mademoiselle Madison
-3 large carrots, shredded
-1 tbsp dried cranberries
-1 tbsp unsweetned shredded coconut
-1 tbsp. sunflower seeds
-a few crumbles goat milk feta
-3 tbsp. dressing (see link below) but really anytype of sweet poppyseed dressing would do. I did cut the honey in the recipe from the link to 1/2 cup and it was still plenty sweet.

Mix and put in fridge overnight. Perfect for school lunches!

Greek Tacos

After our last trip, to the best gyros in the city of Milwaukee Oakland Gyros, I had an idea for a new recipe...a greek taco. Maddy was very skeptical, but she actually ended up eating the most. We tried making lamb burgers on one other occasion and it just was not good. So, this time I chose to double the meat and do 1 lb. ground turkey and 1 lb. ground lamb. This combination was a winner. You could taste the lamb, but it did not overpower anything. Complete with my version of cucumber sauce, this recipe is good! Maddy asked if we could have it every week. She also came up the with the idea of different tacos every week...a normal taco, a greek taco, and indian taco. My little culinary protege:)  The recipe listed is for 2 nights worth of meat, so you can freeze half of the meat right away or just have it 2 days in the week. I appologize up front for my lack of true measurements. It really was a shake of this and a shake of that. 

Greek Tacos
Meat Portion
1 lb. ground lamb
1 lb. ground turkey
4 cloves of garlic diced
few shakes of salt
few shakes of cinnamon
few shakes of oregano
shake of thyme
shake of parsley
You dont want the flavor to overpower, just to be subtle, so continue to add spices to your taste.
Cook meat with 1 tbsp. olive or oil of choice. Add seasonings and cook until done.

Cucumber Sauce
1/2 cup goat (or cow) milk yogurt
1/2 of a cucumber, peeled, deseeded and chopped into teeny tiny pieces
3 cloves of garlic finely diced
shake of garlic powder
few squeezes of a lemon
Mix all ingrediants together and let sit in the fridge for a few hours

Extras
Goats milk Feta (its the only true feta afterall)
sliced cucumbers
sliced onions
sliced tomatoes
Pitas (or do a naked taco over rice)

Assemble meat with extras in pita shell and add cucumber sauce. There ya go...Opa!

Blessings All Around

Yesterday my new naturopath doctor emailed me the greatest news....Jackson, 100%,  has a gluten sensitivity and candida. We did some diagnostic testing on him to give us the diagnosis. I have been trying to figure this out, on my own for 3 1/2 years now. I always had a sneaking suspicion that he shouldn't be eating gluten. But, always allowed "cheats" here and there. It's hard for a 7 year old to turn down the class birthday treat or to ALWAYS take food with me everywhere! But, cheat no more. We need to get his gut back to optimal health. If anyone knows me well, they know that Jackson hates vegetables, most protein, and loves fruit. So, this yeast thing will not be an easy road to treat either. However, he has been trying new foods everyday. Even just a teaspoon of them is better than none. There is finally hope on the horizon and that is why this is a blessing. So, this week we are down to 1 fruit a day, and one gluten free carbohydrate a day. Sounds impossible, I know, seeing that his menu is already limited.  I did find this awesome breakfast idea that fits the bill. It has protein, good fats, and it's full of fiber...plus it's really good. Jackson even commented that he could be creative with it...by adding different stuff to it. Anything to get him involved in the process helps. It's called a mug muffin. I found a recipe online but, as always, put my own spin on it. I realize that my picture doesn't make it look uber appetizing because part of it dripped over the side in the microwave, but I promise you, it is yummy and very soft and moist inside. Almost cupcake like. The dripping on the front of it actually looks like a kinda creepy smiley face:)

Coconut/Blueberry "Muggin"
2 eggs
2 Tbsp coconut flour
2 Tbsp unsweetened shredded coconut
1 tsp. cinnamon
1 packet of Better Than Stevia sweetener
1/2 tsp. baking powder
handful of blueberries or any fruit
1/4 cup coconut milk
2 Tbsp melted coconut oil
1/4 tsp. vanilla
pinch of salt

Combine/Mix all together in a coffee mug and put in the microwave for 3-5 minutes or until knife comes out clean. Mine took 4 minutes. I spread coconut butter on top and a slight drizzle of honey. If you are on a non-specific diet you can use any variety of milk, sweetener, and flour. Whip cream 
on top, whatever...BE CREATIVE!

Tonight I am trying sweet potato and cinnamon latkes with coconut cream....if I can pull this one off, it will be a miracle...wish me luck!

Top Of the Mornin' To Ya'

Kids asked me if I was doing anything special for St. Patty's Day.....we are only a teeny bit Irish but a good exuse to get them to eat some greens and have a little fun...so YES! I made them a homemade Shamrock Smoothie for breakfast this morning. It is very similar to my Kavacado smoothie but with a few exceptions:

"Shamrock" Smoothie
1/2 banana
1 cup of ice
1 cup of unsweetened coconut milk
1/2 cup of coconut or regular water
3 romaine lettuce leaves
1 handful of frozen kale
1/2 tsp. vanilla extract
1/2 tsp. mint extract
1 tbsp pumpkin seed powder (or any other protein powder you may have)

Blend and enjoy. It was a huge hit. I topped it with a little Truwhip 
(if you havent heard of it, check it out) http://www.truwhip.com/

When Maddy finished it she said in a Leprechan (more like a pirate accent) 
"A nice way for the kiddies to get their greens."

Happy Birthday Dr. Seuss: Green Grinch Soup

In honor of Dr. Seuss' Birthday I found a recipe for green soup online that I just had to try. Of course, I manipulated the recipe a little bit and came up with my own version of it. I have tried green soup before and it lacked in taste and seemed too watery. This one however was a winner! Yummy, creamy, and SO good for you. Probably a good soup if you have a cold, are going through the winter blahs, or just  to give you an immune boost in these last glorious weeks of winter. 

Green Grinch Soup

1/2 tbsp olive oil
1/2 cup onion, chopped
2-3 cloves of garlic, roughly chopped
1 cup broccoli, chopped
1 cup leeks, chopped
1 cups brussels sprouts, trimmed and halved
1 1/5 cups spinach
2 cups vegetable or chicken stock


- In a large pot, heat the olive oil over medium heat. Sauté the onion for a minute or two, then add the garlic and sauté for another minute. 
- Add the spinich,broccoli, leeks and brussels sprouts, and stir. Let cook for a few minutes, 
stirring occasionally.
- Add the broth, bring to a simmer, cover, and let cook for 15-20 minutes or until the 
veggies are soft
- Put it all into a food processor, blender, or Vitamix and blend until smooth. Add 1/2 cup coconut milk (actually any milk will do)

Season with salt and pepper as you please. I found I needed nothing. It was perfect. Makes about 3 bowls full. Enough to make at the beginning of the week and have for lunch a few days. I paired mine with some sauteed garlic shrimp and a cabbage steak. Sounds weird to come, but seriously yummy to me:)

My new favorite smoothie...The Kavacado!

I have been bombarding my body lately with chlorophyll! Sounds odd, I know. Just bumping up my intake of green vegetables in general, less fruit, no wheat. I have been doing this now for 2 weeks and feel unbelievable. My anxiety is 95% gone, I feel more clear headed, no headaches, I have tons of energy, and I didn't even have 1 cramp when my monthly friend came to visit...amazing!  Avacado is my new best friend. I love avacado, so I have no problem eating one a day. I was missing my fruit smoothies and most green smoothies sounded disgusting. I like green juice, but a chunky smoothie did not sound appetizing. However, I went out on a limb and tried an avacado one...which I put my spin on my adding kale. I prefer it to a fruit smoothie and it has been kid approved. So, you know if my picky Jackson is drinking it that it must be good. Here it is:

Kavacado Smoothie
- 1/2 of an avacado
- 1 1/2 cups of coconut milk (I can't say how almond, rice, hemp, or cow's milk would make it taste, 
                                              but I am sure any one would be fine)
- 2 big handfulls of frozen, chopped kale (such a good thing to keep in your freezer to add to 
                                                                  any smoothie....can't even taste it)
- 1/2 cup crushed ice
- 1 or 2 packs stevia or sweetner of choice (stevia works wonders at balancing your blood sugar)
- 1 Tsp. vanilla extract
- 1/2 Tsp. almond extract
- 1 Tbsp. coconut oil
- 1 scoop protein powder
- 1/2 Tbsp. chia or flax seeds

Blend and enjoy. If it seems too thick, add some more milk or water. Tastes very much like pistacio:)
Everything beyond the basics are optional. If you don't have any protein powder, chia, or coconut oil...not a big deal. Without them this is an extremely nutritious smoothie, but with them it is a powerhouse!

Stinkies & Thieves

Anyone who knows me well, knows that I cannot sleep at night without my "stinkie." It's technically a rice sock. My mom made one for me at one time and Don simply could not stand the lavenderish smell, so from than on they became known as "my stinkies".  Heat it up in the microwave and it is a great soother for a sore tummy or muscles. It can also be put in the freezer for injured muscles. It, honestly, calms me down at the end of the day. Some, of which I am sure, is the fact that it makes me think about my mom. Kinda like a hug from her at the end of the day:) They are WAY to easy to make and you can totally personalize them. We like to buy holiday socks on sale to fill ours and since pairs are 2, you get 2 for the price of one! So many fun patterns to choose from as well. Even if you do not have all the oils listed, a simple lavender or grapefruit sock would be lovely as well. Here are the things you need:

Sleepy Stinkies:
1 knee high sock
2 1/2 cups of non-instant rice
few drops of lavender essential oil
few drops of sage essential oil
few drops of bergamont essential oil
few drops of marjoram

Mix uncooked rice with oils in bowl and funnel into sock. Tie end of sock...DONE!
Heat for 1 minute or more to your liking.

These oils are good for calming down or relaxing.

Sad Day Stinkies:

1 knee high sock
2 1/2 cups of non-instant rice
few drops of lemon essential oil
few drops of grapefruit essential oil
few drops of mint essential oil
few drops of sweet orange
(I buy So Essential Oils ay Health Hut)

Mix uncooked rice with oils in bowl and funnel into sock. Tie end of sock...DONE!
Heat for 1 minute or more to your liking or this one can just be room temp.

These oils are uplifting oils good for bringing up moods or enhancing alertness.

I also made my own Thieves Blend. Anyone who has ever heard of Young Living Oils knows Thieves. I think it is the most popular oil in the brand. Known for it's immune boosting and sanitizing properties...but SUPER expensive. So, of course, I found the recipe online and I made that up today too. I can't take credit for this one, but here is the recipe if you are interested and there is also a list of the million things it can help with listed on the site:
